Paul Joseph

A Culinary Story
Chef Paul Joseph’s journey to the kitchen did not begin in a restaurant—it began at home, as a chore, where the simple act of cooking for family revealed a calling too powerful to ignore. After establishing himself in the world of accounting, he made the bold decision to leave the corporate path and pursue the craft that had always stirred his imagination. He enrolled at the Culinary Arts Institute at Hudson County College, and from the moment he stepped into a professional kitchen, his trajectory was set.
His classical foundation was shaped at the AAA Four Diamond Le Petit Chateau in Bernardsville, New Jersey, where discipline, precision, and respect for technique became the pillars of his culinary identity. From there, Chef Paul stepped into the vibrant world of New York’s dining scene, beginning at the legendary Tavern on the Green. His talent quickly drew attention. As Executive Chef at Sweet Basil in West Orange, he earned a coveted three‑star review from Nancy Thorpe of The Record, signaling the rise of a chef with both artistry and authority.
Chef Paul continued to refine his craft at Le Rendez Vous in Kenilworth under Chef/Owner Philippe Lièvre, contributing to a kitchen recognized with three stars from New Jersey Monthly and an Excellent rating from The New York Times. His leadership expanded across prestigious institutions, including the Four Diamond Warwick New York Hotel, Bobby Van’s Steakhouse, FireBird Russian Restaurant, and Weill Cornell Medicine. As Culinary Director for RAVE Catering & Event Planning, he brought elevated technique to Glatt Kosher cuisine, redefining expectations within the category.
His work attracted acclaim from ELLE, New York Press, COSMOPOLITAN, Gotham Magazine, RESIDENT, Frida Sweden, The Washington Times, Caviar Affair, and other leading publications—solidifying his reputation as a chef whose voice resonates across cultures and cuisines.
Chef Paul’s cooking is defined by integrity, and purpose—an unwavering commitment to excellence that continues to inspire every guests. He blends classical French training with a devotion to organic produce, free‑range meats, and sustainably sourced ingredients from local farmers and artisans. A culinary philosophy that emphasizes natural reductions, clean emulsions, and the elimination of artificial ingredients. Every dish reflects his belief that the finest cuisine begins with respect—for the ingredient, for the craft, and for the guest.
Beyond the kitchen, Chef Paul remains a guiding force in the culinary community. As a Chef Consultant, he provides strategic leadership to restaurateurs and hospitality groups throughout the tristate area, shaping operations with the same precision he brings to his plates. As a Culinary Arts Instructor, he mentors emerging chefs, passing on the discipline, curiosity, and passion that define his own career.
